Britty's #1 Best Unhealthy Vegan Lasagna Recipe

OK guys, let me get something straight before you read this whole recipe. This is the most expensive thing I make. Especially for how quickly it disappears after it comes out of the oven. It can run you anywhere from $20 - $25 at the store, depending on the brands you buy. This isn't too much money, really, but I know some of ya'll are cheap. I've included my preferred brands of each in the recipe (and Daiya sucks for most things....but for some reason I really like it in this one).

Basically Vegetable-Free Lasagna

1 Package of Skinner Oven-Ready Lasagna
3 Cups Plain Tomato Sauce
1 Package of Tofurky Ground Beef
1 Bunch of Fresh Basil, leaves only, finely chopped
1 Package Extra Firm Tofu
2 Tablespoons Olive Oil (separate)
1 Tablespoon Dry Oregano
1 Tablespoon Dry Basil
​3 Tablespoons Nooch (Nutritional Yeast)
1 Tablespoon Fresh Chopped Garlic
1/3 Tub of Tofutti "Better than" Cream Cheese
1 Whole Package Daiya Cheese

Brown the Ground Beef in a frying pan with 1 Tablespoon olive oil. Add 1/2 of the chopped fresh Basil. Add all of the tomato sauce, let it cool on the stove.

Drain the tofu (not too much), and crumble it with your hands into a medium-sized bowl. It needs to be spreadable, so really get in there. Add the "cream cheese" and microwave for about 45 seconds, (or use room temp cream cheese). Mix it all up, add the other half of the fresh basil, dry basil and dry oregano, nooch, fresh ground black pepper & salt to taste, fresh garlic and the remaining tablespoon of olive oil. Mix very well.

​(If you want to add some flavor, put some vegan parm up in there!)

To get your pan ready, spread 3/4 cup of the ground beef/tomato sauce mix along the bottom of the pan. Add 3 lasagna sheets crosswise over the sauce. Spread the tofu mixture over each piece of lasagna evenly. It will seem like a lot. Pour 3/4 of a cup of the sauce once again over the noodles, and sprinkle with daiya cheese. Repeat these steps twice more. The last lasagna pieces will only be covered with the remaining sauce and cheese.

Bake for 30 minutes covered with foil in a 350 degree oven. Remove foil, then bake for 15 more minutes uncovered. And done!
